Rogan Josh: Ingredients You’ll Need
This rogan josh recipe comes with quite a few ingredients, so it’s important to make sure you have everything you need before you begin the cooking process. Below is an estimate of the ingredients you’ll want to make rogan josh:
– 2 ½ cm ginger, peeled and chopped
– 7 peeled garlic cloves
– 4 tablespoons water
– 10 tablespoons vegetable oil
– 1kg boneless lamb shoulder (cubed)
– 10 cardamom pods
– 2 bay leaves
– 6 cloves
– 2 cinnamon sticks
– 4 onions, peeled and chopped
– 6 tablespoons plain yogurt
– ¼ teaspoon garam masala
– Spices: coriander, cumin seeds, paprika, cayenne pepper, salt
How to Prepare Rogan Josh
Begin by heating oil in a pot over medium or high heat. Brown the meat and set it aside. Then mix the cardamom, bay leaves, cloves and cinnamon into the pan, stirring occasionally. Then you can add the onions. Let these cook while stirring periodically until the onions begin to caramelize.
Blend the ginger and garlic with a few tablespoons of water until it takes on the texture of a paste, and mix into the pan. Next, add the coriander, cumin, paprika-cayenne, and some salt. Let that fry for a minute or two while stirring.
Add the meat back into the mix, along with the yogurt, and stir the mixture well. Then add a little water to the mixture and put a lid on, allowing it to boil on its own. Reduce the heat to low and allow it to cook for an hour, stirring every 10 to 15 minutes.
Once you’ve boiled away most of the liquid, sprinkle on some garam masala, and your rogan josh will be ready to eat!
