Idli Sambar: A Classic and Authentic Combo

Our menu is chock-full of classic and innovative Indian dishes, and our idli sambar is no exception. Available during our lunch buffet, idli sambar combines two of South India's popular dishes for one incredible meal.
Idli, a traditional breakfast in South India, is a savory cake commonly eaten throughout India. The cakes are prepared by steaming fermented black lentils and rice, though each component is soaked separately for approximately four hours. While the main ingredients soak, spices may be added for more flavor. When the lentils and rice are finished soaking, they are each ground separately to be left overnight for fermenting. Finally, the newly made batter is poured into molds for steaming. Once the idli is done, it's time to complement it with a traditional stew: sambar!
Typically a lentil-based stew, sambar is a popular addition to idli. Traditional sambar is most often made with vegetables like carrot, radish, daikon, potatoes, eggplant, and onions, though vegetables can be selected by preference. The vegetables are boiled with a variety of spices, tamarind pulp, turmeric and more only until they are halfway cooked. The lentils are then added to the vegetables until done cooking, and then finished off with curry leaves, dried red chillies, black gram, and mustard seeds. The finished product makes for a traditional idli sambar!
